some important quotations with their explanations

The speaker is Ronny Heaslop, the city magistrate, He is speaking to his mother Mrs. Moore. Ronny is telling his mother that he is in India as other British officials who serve their imperial government for a purpose.
" something more important to do " means that he is in India not for the purpose of mixing or socializing with Indians and it's none of his concern at all to be pleasant or kind with them unlike his mother who wants to show understanding and sympathy to the poor Indians.
And while his mother wants him to be kind to Indians, he makes it very clear that he is here to keep India under the power and control of the British government.

The speaker is Mrs. Callendar, she is the wife of the civil surgeon who is intolerant and biased against Indians and in short, he is the exact opposite of Mrs. Moore.
The major calendar and his wife are examples of British officials who are completely disregard human feelings and indifferent to Indians.
This was spoken by Mrs. Callendar while Adela and other British women were talking about Adela's desire to see the real India, but Mrs. Callendar was wrong in her talk, and the correct say is the cruelest and the most merciless to a native is to let him die.

This quote takes place in the mosque, the speaker is Mrs. Moore, Ronny's mother. The fact the she took off her shoes before entering the mosque shows her respect for Islam as a culture, and readiness to comply by its instructions is out of respect for its followers.
And Aziz was able to make relationship with Mrs. Moore, because he realized that she respects him as a human being irrespective his religion, and shows that she has a high regard for Islam.

The speaker is Hamidullah, and he is speaking to Mahmoud Ali. The occasion is during a dinner party held in Hamidullah's home, where the Indian friends discuss a very important topic which the whole novel revolves around. The topic is if it's possible for English and Indians to be friends.
And "they" in Hamidullah's statement refers to the English new comers to India who have no chance to become friendly or to establish good relations with Indians, because they fall under the influence of those officials who have settled long before them in India.
The new comers are pure and innocent and they want to treat Indians nicely, but they full under the influence of the British officials who make them change their attitude.
" Fielding will go next" means that Fielding will be like others such as Leslely and Blakiston, and he will change his attitude.
